Calamari Ceviche with Apricots – Recipe

Ingredients (4-6 servings):

  • 500 g squid strips
  • 1 red chilli pepper
  • 1 medium red onion
  • 5-6 apricots
  • a bunch of parsley leafs
  • 1 lemon
  • 2 limes
  • 1 grapefruit
  • 1-2 teaspoons fish sauce
  • salt and pepper to taste

Preparation method:

  1. Slice thinly the squid strips.
  2. Chop the red onion.
  3. Chop the chilli pepper.
  4. Halve the apricots, bone them and dice them.
  5. Chop the parsley leaves.
  6. Add to a bowl the calamari, red onion, chilli pepper, apricots and parsley leaves.
  7. Squeeze the juice of the limes, lemon and grapefruit.
  8. Pour over the bowl’s content the citrus juices, mix them well and season with fish sauce, salt and pepper to taste.
  9. Leave the squid mixture to marinate for about an hour.
  10. Serve in small bowls garnished with wedges of apricot, lime and lemon.

Salpicon de Marisco – Spanish Seafood Salad

Ingredients:

  • 500 g frozen mixed seafood
  • 1 green onion
  • 1 green pepper
  • 250 g cherry tomatoes
  • 5 garlic cloves
  • olive oil
  • cider vinegar
  • salt to taste

Preparation method:

  1. Chop the garlic.
  2. Chop the green pepper.
  3. Halve the cherry tomatoes.
  4. Peel the shrimps if needed.
  5. Cut the octopus and the surimi into slices.
  6. Chop the onion into small pieces
  7. Chop the red pepper and the green one.
  8. Place all these ingredients in a bowl, including with the black olives, which I forgot to add :).
  9. Mince finely the garlic.
  10. Prepare the vinaigrette: Add the oil, vinegar, salt and the minced garlic into a bowl, and using a fork beat it until emulsified and thickened. Add more olive oil or vinegar to your taste.
  11. Drizzle the vinaigrette over the salpicon bowl. Let it rest for 1-2 hours for its ingredients to marinade.
  12. Serve it cold.

Fusion Tzatziki with Cucumber Mint and Mozzarella Recipe

Ingredients (2-3 servings):

  • 1 long cucumber
  • 3 green garlic
  • approx 10 mint leaves
  • 200 g Greek yoghurt
  • 100 g mini mozzarella balls
  • salt and pepper to taste

Preparation method:

  1. Slice the spring garlic.
  2. Cut the mozzarella balls into two.
  3. Shred the mint leaves into 3-4 pieces each.
  4. Wash the cucumber and slice it into thin slices (2-3 mm thick).
  5. Add all these ingredients into a bowl, mix them carefully not to break the ingredients. Add salt and pepper to taste.
