  1. Risotto with Duck Hearts and Radicchio

    Ingredients (4 servings):

    • 400 g duck hearts
    • 1 head of small radicchio or half of a large one
    • 250 g (a cup) arborio rice
    • 50 ml extra virgin olive oil
    • 50 g butter
    • 50 g Parmesan cheese
    • salt and freshly ground black pepper
    • 1 teaspoon of dry thyme leaves
    • 1 bay leaf
    • 100 ml sweet white wine
    • 1-1.5 l chicken stock
    • 1 medium onion, I use a red onion

     

    Preparation method:

    1. Cut each duck heart in two lengthwise
    2. Wash them under running water to remove the remaining blood clots.
    3. Chop the onion.
    4. Heat the olive oil, add the chopped onions and fry over low-medium heat for about 5 minutes until fragrant.

    5. Add the halved hearts, the dried thyme and bay leaf, salt and freshly ground black pepper
      and keep frying over low heat about 10-15 minutes until the hearts soften and half cooked.
    6. Meanwhile chop the radicchio.
    7. Heat up the stock and keep it hot while cooking the rice.
    8. Add the chopped radicchio and stir fry in the pot for another 2 minutes, until the radicchio has softened.
    9. Add some more olive oil and the arborio rice and fry for another minute or so.
    10. Add the wine and start cooking the rice, continuously stirring the pot’s content.
    11. When the wine is absorbed
      add a ladle of stock to the pot and keep stirring until the liquid is incorporated.
      keep doing it one ladle at a time until the rice is cooked but still with texture for about 15-20 minutes.
    12. Remove the risotto from heat and add the grated Parmesan cheese and the butter and stir them together. Season with salt and pepper to your taste if needed.
    13. Serve the risotto topped with chopped parsley and some more grated Parmesan cheese.

  2. Parmesan Roasted Asparagus Recipe

    Ingredients (2 servings):

    • 400 g asparagus
    • 2 tablespoons olive oil
    • 1 garlic head
    • 100 g grated Parmesan cheese
    • 100 g breadcrumbs
    • salt and black pepper to taste

     

    Preparation method:

    1. Trim the asparagus about 5 cm each.
    2. Chop the garlic cloves.
    3. Preheat the oven to 200 C. Smear some olive oil
    4. Place the trimmed asparagus in a (resealable) plastic kitchen bag together with the chopped garlic, the grated parmesan, breadcrumbs, salt and freshly ground black pepper to taste.
    5. Seal this bag and shake lightly to mix the ingredients evenly.
    6. Empty the bag in an oven proof dish and spread them evenly, parallelly so the asparagus doesn’t touch each other.
    7. Roast for about 15 minutes, until the asparagus is tender and browned.
    8. Broil for the last 2 minutes until the asparagus is crisp to your liking and the breadcrumbs golden-brown.
    9. Serve hot with aioli, or your favorite dip, I used plain sour cream.


  3. Asparagus Frittata – Italian Omelette

    Ingredients (2 servings):

    • the bottoms of a bunch of asparagus
    • 4 free range eggs
    • 1 medium onion
    • olive oil
    • 50 g grated Parmesan cheese
    • salt and pepper to taste

     

    Preparation method:

    1. Discard the woody third of the asparagus stalks.
    2. Cut in small pieces the asparagus.
    3. Chop the onion.
    4. Beat the eggs in a large bowl.
    5. Add the Parmesan cheese, stir it in the egg to incorporate smoothly. Season to taste with salt and freshly ground black pepper.
    6. Heat the olive oil in a smaller frying pan.
    7. Add the chopped onion and fry lightly until a bit fragrant for about 2 minutes.
    8. Add the chopped asparagus and keep frying for a few minutes until cooked.
    9. Pour over the egg mixture in the skillet, distribute it equally over the asparagus, cover and fry over medium heat for 5 minutes.
    10. By now the surface of the omelette should be thickened ready to be flipped.
    11. Either by a quick move of hand or with the help of the lid, flip the omelette.
    12. Fry the other surface of the omelette for 2 minutes.
    13. Serve while still warm, grate some extra Parmesan if you like it.
