  1. Baked Purple Potatoes and Fish Recipe

    Ingredients (4 servings):

    • 1 kg purple potatoesBaked Fish and Purple Potatoes 01
    • 4 pieces of white fish fillets
    • 2-3 tablespoons soy sauce
    • a handful of peppermint leaves
    • 10-15 slices of red hot chili peppers preserved in salted brine
    • salt and black pepper to taste

     

    Preparation method:

    1. Wash thoroughly the potatoes and cut them into quarters.Baked Fish and Purple Potatoes 02
    2. Smear some olive oil on the bottom of an oven proof dish, place the quartered potatoes in it, sprinkle over salt and freshly ground pepper.Baked Fish and Purple Potatoes 03
    3. Wash the fish fillets and place them into another oiled oven proof dish. Sprinkle the soy sauce over and garnish with the chilli pepper slices and fresh mint leaves.Baked Fish and Purple Potatoes 04
    4. Preheat the oven ant 180 C.
    5. Bake the fish for circa 15-20 minutes depending on the thickness of the fillets.Baked Fish and Purple Potatoes 06

    7. Serve the fish and potatoes garnished with tomato slices.Baked Fish and Purple Potatoes 07

  2. Baked Catfish with Pineapple and Mushrooms Recipe

    Ingredients:

    • 1 whole smaller catfish – about 2 kgaIMG_8369
    • 1 pineapple
    • 250 g medium to small tomatoes
    • salt and pepper to taste
    • 4 garlic loves
    • 500 g oyster mushrooms
    • 1/2 lemons juice
    • 2-3 green onion stalks
    • 2-3 tablespoons olive oile

     

    Preparation method:

    1. Wash and degut the fish.aIMG_8371
    2. Slice the fish into 2 cm slices. Remove the head and tail, preserve them for a fish head soup. The recipe will follow soon.aIMG_8373
    3. Slice the whole pineapple into 2 cm slices, leave its skin on. Cut every slice into quarters.aIMG_8375
    4. Put the fish and pineapple slices into a bowl. Sprinkle some olive oil and lemon juice over. Grind some salt, black pepper. I have also grind some very nice fish condiments, mostly herbs and dried vegetables. Stir them gently and leave them for 5-10 minutes.
    5. Lay the fish and pineapple slices into an oven tray, bake them for about 20 minutes at 180 C.aIMG_8378
    6. Chop the green onions and garlic.
    7. Cut the tomatoes into quarters.aIMG_8385
    8. Add the chopped garlic, green onions, quartered tomatoes and oyster mushrooms on top of the fish-pineapple tray.aIMG_8389
    9. Bake them for another 20-25 minutes until the mushrooms are roasted a bit and the tomatoes are well wilted.aIMG_8399
    10. Remove the tray from oven and serve while still hot.aIMG_8402

  3. Roasted Mashed Potatoes Layered Cake Recipe

    Ingredients:

    • 2 kg potatoes
    • 250 ml heavy cream
    • 100 g butter
    • cca 500 ml milk
    • salt, black pepper, nutmeg to taste
    • 6 egg yolks
    • 400 g chopped spinach (even frozen one)
    • cca 4-6 tablespoons salted red pepper paste
    • 8 cherry tomatoes for decoration

    Preparation Method

    1. Wash the potatoes thoroughly, leave their skins.
    2. Fill a pot with water, add the potatoes, bring it to boil and cook them about 45 minutes on medium heat.aIMG_7953
    3. Peel the potatoes while still hot.aIMG_7957
    4. Add the heavy cream, butter, salt, freshly ground pepper and nutmeg to taste. Using a potato masher, mash and stir the potatoes with the other ingredients. Add some milk until you reach a creamy consistency.aIMG_7961
    5. Separate the mashed potatoes into 3 bowls for each of the three flavors/colors: regular/yellow, spinach/green and red pepper/reddish orange. The part for the spinach should be smaller then the other ones because the spinach we’ll add will take some volume.
    6. In the Regular: add 2 egg yolks, salt, black pepper and nutmeg to taste and stir them well with the masher.aIMG_7964
    7. In an ovenproof glass dish spread evenly a layer of these mashed potatoes aIMG_7966
    8. Preheat the oven at 180 C and bake it for 20 minutes until its top it is a bit golden brown.aIMG_7972
    9. Meanwhile prepare the green – spinach layer:
    10. Add the spinach, 2 egg yolks and salt and pepper to taste. Using a stick blender, mix them all together.aIMG_7968
    11. Spread carefully this green mashed potatoes in a layer of  on top of the yellow one. Bake it in the oven for another 20 minutes.aIMG_7974
    12. Now it’s time for the red layer: Mix the remaining mashed potatoes with 2 egg yolks and 3-4 salted red pepper paste.aIMG_7975
    13. Stir them all together, then spread it as the final layer in the baking dish.aIMG_7979
    14. In order to give it more festive look, ornate it with some halved cherry/plum tomatoes.aIMG_7978
    15. Bake it for another final 20 minutes.aIMG_7981
    16. Bring ot of the oven and let it cool down before serving.aIMG_7984
