    I was recently for a long weekend in Southern Italy, in Puglia and Basilicata.
    The food there was very tasty, a lot of seafood and other fresh but simple ingredients.
    i Will definitely try soon some of the local recipes like the “patate riso e cozze” (potatoes. rice and mussels) or “orecchiette con cime di rapa” (orechiette pasta with broccoli rabe) and so on…

    When in Matera, a wonderful town, I bumped into the town’s farmer market.
    There were a lot of fresh greens, olives and other yummy vegetables.
    But what caught my eyes were the local cheese called caciocavallo – a semi matured cheese made from cow’s milk.
    The best of the best was though the sundried tomatoes – called in Italian pomodori secchi – so fragrant and red. I even bargained a bit for them 馃檪
    The orange flavored linguine I bought from another picturesque town -Alborebello.

    When I returned home I improvised a recipe based on these 3 main ingredients: sundried tomatoes, caciocavallo cheese and orange linguine and here is the recipe:

    Ingredients (4 servings):

    • 250 g linguine all’arancia (linguine with orange)a2015-05-09-21.22.35
    • 50-75 g salted sundried tomatoes
    • 200 g caciocavallo cheese (or other hard cheese like provolone)

      Linguine all’Arancia

    • 5 garlic cloves
    • 100 ml heavy cream
    • 1 small chilli pepper
    • virgin olive oil

    Preparation method:

    1. Cook the linguine pasta according to their instructions in salty water.
    2. Soak the sundried tomatoes in water.
    3. Chop coarsely the garlic cloves.
    4. Cut the cheese in small pieces.
    5. Heat 2-3 tablespoons olive oil in a pan over medium heat.
    6. Add the chopped garlic, chili pepper and sundried tomatoes and fry until fragrant and the tomatoes are a bit roasted.

    7. Add the cheese to the pan and fry a few seconds until it starts to melt.

    8. Drain the pasta and add to the pan.
    9. Stop the fire, add the cream and stir carefully聽to mix them all together.

  2. Baked Purple Potatoes and Fish Recipe

    Ingredients (4 servings):

    • 1 kg purple potatoesBaked Fish and Purple Potatoes 01
    • 4 pieces of white fish fillets
    • 2-3 tablespoons soy sauce
    • a handful of聽peppermint leaves
    • 10-15 slices of red hot chili peppers preserved in salted brine
    • salt and black pepper to taste

     

    Preparation method:

    1. Wash thoroughly the potatoes and cut them into quarters.Baked Fish and Purple Potatoes 02
    2. Smear some olive oil on the bottom of an oven proof dish, place the quartered potatoes聽in it, sprinkle聽over聽salt and freshly ground pepper.Baked Fish and Purple Potatoes 03
    3. Wash the fish fillets and place them into another oiled oven proof dish. Sprinkle the聽soy sauce over and garnish with the chilli pepper slices and fresh mint leaves.Baked Fish and Purple Potatoes 04
    4. Preheat the oven ant 180 C.
    5. Bake the fish for circa 15-20 minutes depending on the thickness of the聽fillets.Baked Fish and Purple Potatoes 06

  3. Chicken Drumsticks Marinated in Kefir and Apricot Kernels Recipe

    Ingredients:

    • chicken drumsticks
    • kefir
    • chicken drumsticks
    • apricot kernelsiIMG_8340

    • salt and pepper to taste
    • lemon juice
    • olive oil

     

    Preparation method:

    1. Grind coarsely the apricot kernels.iIMG_8342
    2. Add to a bowl the the chopped apricot kernels, keffir, olive oil, lemon juice, salt and pepper. Stir them well.iIMG_8345
    3. Place the drumsticks in the bowl and cover them with the marinade.iIMG_8346
    4. Leave them marinate for 1-2 hours.iIMG_8349
    5. Remove the chicken drumsticks from the marinade, shaking the excess marinade.
    6. Grill them for about 35 minutes turning them from time to time.iIMG_8355
    7. Serve them with the remaining marinade poured over.iIMG_8358
