  1. Chicken with Pears and Blue Cheese Recipe

    Ingredients (2 persons):

    • 300 g chicken breast
    • 1 large aromatic pear
    • 50 g blue cheese
    • 10-15 almonds
    • 100 g butter
    • salt to taste
    • 1 teaspoon hot paprika
    • a bunch of ramsons (wild garlic) leaves for garnishing (optional)

    Preparation method:

    1. Wash the chicken breast and cut them into two slices.
    2. Slice thinly the pear.
    3. Rub salt and hot paprika on both sides of the chicken slices.
    4. Heat the butter in a pan and fry slightly the chicken on both sides over medium-high heat.
    5. Remove the chicken from the pan and braise slightly the pear slices on both sides in the same pan.
    6. In an ovenproof dish place the chicken slices, covered by the pear slices then the blue cheese and the chopped almonds.
    7. Roast in in the prehheated oven for 10-15 minutes until the cheese is melted a bit.
    8. Serve with some greens as side dish, I used some freshly and roughly cut ramsons (wild garlic) leaves, since spring it is their season.

  2. Kumato Tomato and Cheese Salad Recipe

    This is a modified version of Capri Salad (Insalada Caprese), I added some very spicy blue cheese and red onions to it to give a richer taste.

    Ingredients (2 persons):

    • 4 kumato tomatoes
    • 200 g fresh mozzarella cheese
    • 50 g blue cheese
    • 1 medium red onion
    • balsamic vinegar
    • a few fresh basil leaves
    • some chives
    • 2 tablespoons olive oil
    • 4 slices of bread


    Preparation method

    1. Slice thinly the kumato tomatoes.
    2. Slice the mozarella cheese.
    3. Depending on the consistency of the blue cheese, crumble or cut in small pieces.
    4. Slice thinly the red onion.
    5. Arrange on each plate the slices of tomato, cheeses and onion.
    6. Drizzle a bit of balsamic vinegar over.
    7. Place on top some basil leaves and some chives cut in 1 cm pieces.
    8. In a pan with olive oil lightly fry the bread slices until golden brown.
    9. Serve each plate with 2 fried toast slices.

  3. Mushroom Shaped Deviled Eggs Recipe

    I had some leftover Easter eggs and remembering an idea of a recipe I found on the site:, I decided to do my personal take on this recipe, as follows:

    Ingredients (4 persons):

    • 4 hard boiled eggs or easter eggs
    • 4 smaller tomatoes
    • 1 tablespoon cream cheese
    • 1 tablespoon sour creme
    • 1 teaspoon hot paprika
    • 2 green onions
    • salt to taste


    Preparation method:

    1. Peel the eggs.
    2. Cut a thinner slice off each egg’s wider end to ensure a stable base for the mushroom.
    3. Cut a thicker slice off each egg’s narrow end and carefully scoop the yolks from the eggs.
    4. Dice the green part of a green onion and add to a bowl together with the yolks, creme cheese, sour creme, hot paprika and salt.
    5. Using a fork mash and mix all the ingredient in the bowl.
    6. Place the hollow eggs standing and fill them with the mixture.
    7. Slice the tomatoes in two and place their bottom halves on top of the eggs.
    8. Decorate the tomatoes with some dots of sour creme add the chopped remaining green onion as decoration beside.
